The Hirshon Worcestershire Sauce

Ingredients

Scale
  • ¾ C white vinegar (Whole Foods has an organic, non-GMO one)
  • 1 ¼ C Chinese Sweetened Black Vinegar – buy it online here
  • ½ C Blackstrap molasses
  • ¼ C soy sauce
  • ¼ C Mushroom ketchup – buy it online here
  • ¼ C tamarind paste
  • 1 ½ T yellow mustard seeds
  • 3 T kosher salt
  • 1 t whole black peppercorns
  • 1 t whole cloves
  • ½ t curry powder
  • ½ t mace
  • 6 green cardamom pods, smashed with edge of knife
  • 9 Pequin chilis, roughly chopped (or 5 chiles de árbol)
  • ⅓ cup Georgian Green Tkemali sauce – buy it from Amazon here
  • 3 cloves garlic, smashed with edge of knife and peeled
  • 1 black cardamom pod, cracked
  • 4 anchovies, chopped
  • 4 dried shitake mushrooms
  • 6 large shallots, chopped
  • 1 ½″ piece ginger, peeled and finely chopped
  • 2 ½” piece fresh horseradish root, peeled and grated
  • C turbinado sugar

Instructions

  1. Combine all ingredients in a 2 quart saucepan and bring to a boil over medium-high heat, boil for 10 minutes. Reduce the heat to medium-low and simmer, covered for 40-60 minutes, stirring occasionally.
  2. Cool in pot and then transfer to a mason jar. Refrigerate in the jar for 2 weeks, then strain solids and return to jar. Refrigerate for up to 8 months. Be sure to shake before using.
