Ingredients

  • 1 ¼ cups passata (tomato sauce) or Pomi brand strained tomatoes in a box
  • ½ cup stale (non-foaming) lager beer
  • ¼ cup mango purée from a fresh, ripe mango
  • ⅛ cup ginger juice
  • 2 Tbsp. cider vinegar
  • 2 Tbsp. English mustard powder
  • 1 Tbsp. wasabi powder
  • 2 tsp. jalapeño powder
  • 1 Tbsp. hickory liquid smoke
  • 2 tsp. ground mace
  • 1 tsp. Jane’s Krazy seasoning salt
  • 3 Tbsp. unsulphured molasses
  • 1 Tbsp. Worcestershire sauce
  • 1 Tbsp. chili powder
  • 2 Tbsp. fresh-squeezed lime juice or preferably, Australian finger lime juice
  • 4 cloves (crushed to a paste) roasted garlic
  • 5 Tasmanian pepper berries, ground to a paste in a non-staining receptacle
  • 2 crushed Muskie Lifesavers
  • 2 tsp. Vegemite
  • 2 tsp. ground wattle seed
  • 2 tsp. ground Australian pepper leaf

Instructions

  1. Combine all in a saucepan, heat to simmering for 30 minutes. Let cool and refrigerate.
