The Hirshon Southern Pimento Cheese

Ingredients

Scale
  • ⅓ cup Duke’s mayonnaise (strongly preferred) or use Hellmann’s or Best Foods Mayo if Duke’s isn’t available
  • 1 cup Monterey Jack cheese, grated
  • ½ cup sharp cheddar cheese, grated
  • 3 ounces stilton blue cheese, crumbled
  • ½ cup Yancey’s horseradish cheddar, grated – you can order direct from them or on Amazon
  • 8 oz Philadelphia brand cream cheese
  • 2 teaspoons Dijon mustard
  • 1/4 cup diced pimentos
  • 2 tablespoons peppadew peppers, diced
  • 2 teaspoons Vidalia onion, grated
  • ⅛ teaspoon garlic powder
  • ⅛ teaspoon Colman’s mustard powder
  • ⅛ teaspoon black garlic powder
  • ⅛ teaspoon freshly ground black pepper
  • kosher salt, to taste

Instructions

  1. Add all the ingredients to a large bowl, but reserve ½ the chopped pimentos and the peppadew peppers
  2. Beat with an electric hand mixer or stir with a spatula until extremely smooth and well mixed. Add the reserved pimentos and peppadews and stir in.
  3. Serve with crackers or between two pieces of white bread, crusts trimmed off of course.
