Ingredients

  • 1 cup tur dal
  • 2 potatoes, peeled and cut into cubes
  • 1 carrot, peeled and cut into cubes
  • ¼ cup chopped pumpkin
  • ¼ cup peeled and chopped eggplant
  • ¼ cup chopped banana
  • ¼ cup chopped papaya
  • 1 big onion, chopped
  • 1 tomato, chopped
  • 4 cloves garlic
  • 3” piece peeled ginger
  • 1 karuka (cinnamon) leaf
  • 1 tablespoon ghee
  • ***
  • 1 teaspoon pancho futhana, made from:
  • 50 gm mustard seeds
  • 50 gm cumin seeds
  • 50 gm fennel seeds
  • 50 gm black cumin seeds
  • 25 gm fenugreek seeds
  • ***
  • 1 ½ teaspoons Odiya garam masala, made from:
  • 100 gm cumin seeds
  • 200 gm coriander seeds
  • 25 gm cinnamon stick
  • 5 gm green cardamom seeds, removed from husks
  • 10 gm black cardamom seeds, removed from husks
  • 2 gm cloves
  • 20 gm chana dal
  • 10 gm black pepper
  • ½ star anise
  • 10 gm turmeric
  • 9 cinnamon leaves
  • ½ Nutmeg
  • 4 gm Mace
  • ***
  • 2 jalapeños
  • 1 red Fresno pepper (use ¼ red bell pepper if you want less heat), minced without seeds
  • ½ teaspoon turmeric powder
  • 1 teaspoon freshly-ground cumin powder
  • 1 teaspoon Kashmiri red chili powder
  • ***
  • For garnish:
  • Cilantro leaves, ¼ cup dried coconut shavings and an optional few slices of fresh coconut

Instructions

  1. Cook chopped vegetables and fruits, jalapeños, dal, turmeric powder, big onion, salt and cinnamon leaf in a pressure cooker along with three cups of water.
  2. Wait for three whistles, then lower the flame and allow it to cook for a few more minutes.
  3. Open the cooker when all the steam has settled. Make a paste of the garlic and ginger.
  4. Pour ghee into a wide-mouthed pan.
  5. Roast the pancho futhana masala, Fresno or red bell pepper, ginger-garlic paste, red chili powder, and garam masala in the ghee – see that the ingredients don’t get burned.
  6. Mix the roasted masala mixture with the cooked vegetable mix and dal – add salt and a bit of water if required.
  7. Allow the mix to simmer for 10 minutes, turn out into a dish and garnish with cilantro leaves plus dried and optional fresh coconut meat slices.
