- 1 1/2 Tbsp roasted sesame seeds, divided (reserve 1/2 Tbsp)
- 1/8 cup ground sumac
- 6 Tbsp dried wild thyme
- 1 Tbsp dried marjoram
- 1 Tbsp dried hyssop (optional, if not available, replace with dried marjoram)
- 1/2 Tbsp dried Turkish oregano
- 2 tsp dried savory
- 1/2 tsp freshly-ground cumin
- 1/2 tsp freshly-ground coriander
- 1/2 tsp shumar (freshly-ground fennel)
- 1 tsp coarse salt (sea salt/kosher) – TFD prefers using a spicy Dead Sea salt blend
Instructions
- Grind 1½ Tbsp roasted sesame seed in food processor. Add remaining ingredients and pulse until mixed well. Finally, add the reserved sesame seeds.
- To make a bread dipping sauce, simply pour 1 Tbsp extra virgin olive oil over 1 Tbsp Za’atar in a small dipping bowl.
