The Hirshon Middle Eastern Za’atar Spice Blend – ‫زَعْتَر‬‎, ‫זעתר‬

Ingredients

  • 1 1/2 Tbsp roasted sesame seeds, divided (reserve 1/2 Tbsp)
  • 1/8 cup ground sumac
  • 6 Tbsp dried wild thyme
  • 1 Tbsp dried marjoram
  • 1 Tbsp dried hyssop (optional, if not available, replace with dried marjoram)
  • 1/2 Tbsp dried Turkish oregano
  • 2 tsp dried savory
  • 1/2 tsp freshly-ground cumin
  • 1/2 tsp freshly-ground coriander
  • 1/2 tsp shumar (freshly-ground fennel)
  • 1 tsp coarse salt (sea salt/kosher) – TFD prefers using a spicy Dead Sea salt blend

Instructions

  1. Grind 1½ Tbsp roasted sesame seed in food processor. Add remaining ingredients and pulse until mixed well. Finally, add the reserved sesame seeds.
  2. To make a bread dipping sauce, simply pour 1 Tbsp extra virgin olive oil over 1 Tbsp Za’atar in a small dipping bowl.
