The Hirshon Malaysian Fried Rice – Nasi Goreng USA

  • 300 grams beef – minced
  • 3 cloves garlic – crushed
  • 6 Tbsp. chili paste with garlic
  • 3/4 to 1 cup beef broth, preferably homemade or low-sodium if store-bought
  • 4 Tbsp. sambal oelek
  • 2 Tbsp. Sir Kensignton’s ketchup
  • 1/2 Tbsp. soy sauce
  • 1 1/2 Tbsp. oyster sauce, preferably Megachef brand
  • 1/2 carrot, julienned
  • 1/3 cup spinach leaves, juliennded
  • 1 heirloom tomato, cubed
  • 1 large onion, sliced
  • oil for cooking
  • Freshly-ground white pepper to taste
  • sugar to taste
  • ***
  • 4 cups leftover, day-old cooked rice
  • 3 cloves garlic, crushed
  • 5 Tbsp. sambal oelek
  • 1 Tbsp. Chinese chili paste with garlic
  • 1 Tbsp. Sir Kensington’s ketchup
  • 1 Tbsp. fish sauce
  • 2 skinless chicken thighs or 1 breast, cut into 1” pieces
  • 10 small to medium prawns, peeled, deveined and cut into pieces
  • 4 medium-sized calamari bodies, cut into rings
  • 1 egg
  • 1 tsp. chicken stock powder or an equivalent amount of ground chicken bouillon cube
  • 1/2 carrot, julienned
  • 1/2 cup string beans, thinly-sliced
  • 2 Bird’s eye Thai chilis, minced
  • salt to taste
  • sugar to taste
  • oil for cooking

  • 4 eggs
  • oil for frying
  • ***
  • GARNISHES (Optional, but recommended):
  • Lettuce
  • Sliced cucumber
  • Sliced tomato
  • Chopped celery and green onion
  • Fried onion


  1. Spicy beef gravy: Heat oil in a wok and when it is hot, add in crushed garlic and sauté until brown.
  2. Then, add in chili paste and fry until the oil splits.
  3. Add in beef broth, beef, ketchup, oyster and chili sauces and carrot. Cook until the gravy is slightly thickened and the carrot is soft upon piercing with a fork.
  4. Lastly, add in cubed tomato, sliced onion and sprinkle in sugar and salt to taste.
  5. For Nasi goreng: Heat oil in a pan, when it is hot, sauté crushed garlic until brown.
  6. Then add in chili paste and fry until the oil splits.
  7. Add in ketchup, fish sauce and chili sauce, meat and seafoods, spinach, chicken stock powder/cube, chilis and carrot.
  8. When the ingredients are soft, scrape the paste towards the center, then crack in egg at the side. Scramble the egg with spatula until it cooked, then incorporate with the paste.
  9. Add in rice, beans and mix well.
  10. Lastly, season with salt and sugar.
  11. For the fried eggs: Try to use egg molds to make nicely-shaped fried eggs and use a non-stick pan.
  12. You need to grease your egg molds with oil.
  13. Place about a teaspoon of oil into the pan and place the egg molds on it.
  14. When hot, crack an egg and pour slowly into the egg mold and cook over a low heat.
  15. Cover the pan with a lid if you don’t like a runny, half-cooked egg.
  17. Serve the nasi goreng USA onto 4 plates.
  18. Lay two to three leaves of lettuce to one side and pour spicy beef gravy on top.
  19. Put the fried egg in middle of spicy gravy and then add sliced cucumber and/or tomato.
  20. Sprinkle chopped celery and green onion and fried onion on top of the nasi goreng.
