  • zest from 1 organic lemon, well washed
  • 2 tbsp. hot water
  • 6 tbsp. fresh Italian parsley, chopped
  • 2 cloves garlic, crushed and minced
  • 2 tbsp. fresh oregano, chopped + more for garnish
  • 1 tbsp. fresh mint (optional but recommended as a Sicilian variant)
