Ingredients

  • 3 cups pumpernickel flour
  • 1 1/2 cups whole wheat or all-purpose flour
  • 2 1/2 tsp. baking soda
  • 1 tsp/ kosher salt
  • 750 ml (a bit less than 3 1/4 cups) kefir
  • 3/4 cup Lyle’s Golden Syrup
  • 1/4 cup blackstrap molasses (Optional TFD change – if not using, replace with Golden Syrup)

Instructions

  1. Preheat the oven to 200 °C.
  2. Combine the dry ingredients.
  3. Add kefir, molasses and golden syrup (pro tip: coat the inside of the measuring jug with oil for easy pouring of the syrup and molasses).
  4. Mix the ingredient and transfer to a small loaf pan. Don’t let the dough wait for long, otherwise, it might start rising. Cover with aluminum foil.
  5. Bake for 30 minutes, then lower the temperature to 100 °C and bake for 7 more hours. Remove to cool and enjoy.
