The Hirshon Icelandic Almond-Flavored Cake – Möndlukaka

Ingredients

  • Almond cake recipe:
  • 150 grams sugar
  • 2 eggs
  • 175 grams cultured butter, at room temperature
  • 250 grams flour
  • 1 cup whole milk
  • 1 1/2 tsp. baking powder
  • 1 tsp. almond extract

  • Frosting:
  • 280 grams icing sugar
  • 4 Tbsp. heavy cream
  • Chambord liqueur as needed (preferred) or use red berry juice or red food coloring

Instructions

  1. Combine the sugar, eggs and butter and stir until the mixture is light.
  2. Add the rest of the ingredients and stir well. Put into a bundt pan and bake at 180° C (350° F) for 40 minutes.

  4. Stir all ingredients together, add enough red juice, food coloring or Chambord to obtain a good pink color.
  5. The icing must be poured over the cake while it is still warm.
