Ingredients

  • 2 green Anaheim peppers, seeds removed and chopped
  • 2 jalapeno peppers, chopped
  • ½ Tbsp minced garlic
  • 1 Tbsp minced ginger
  • ¼ c clarified butter (ghee) (preferred) or vegetable oil
  • 1 ¼ tsp ground cardamom
  • ¼ tsp ground grains of paradise
  • ½ tsp ground ajwain seeds
  • ¼ c chopped cilantro (preferred) or Italian parsley
  • ½ Tbsp minced Thai holy basil

Instructions

  1. In a skillet, combine the peppers, garlic, ginger and ghee. Saute until peppers are tender, about 15 minutes. Drain oil off and place in blender with spices. Puree to thin paste, adding a bit of water as necessary. Use as condiment for breads, meats.
