- 2 green Anaheim peppers, seeds removed and chopped
- 2 jalapeno peppers, chopped
- 1/2 Tbsp minced garlic
- 1 Tbsp minced ginger
- 1/4 c clarified butter (ghee) (preferred) or vegetable oil
- 1 1/4 tsp ground cardamom
- 1/4 tsp ground grains of paradise
- 1/2 tsp ground ajwain seeds
- 1/4 c chopped cilantro (preferred) or Italian parsley
- 1/2 Tbsp minced Thai holy basil
Instructions
- In a skillet, combine the peppers, garlic, ginger and ghee. Saute until peppers are tender, about 15 minutes. Drain oil off and place in blender with spices. Puree to thin paste, adding a bit of water as necessary. Use as condiment for breads, meats.
