The Hirshon Equatorial Guinea Baked Banana Coconut Dessert – Akwadu

  • 1 Tbsp. butter, melted
  • 1 orange, juiced
  • 1/4 cup (50g) coconut sugar
  • 1 tsp. freshly-grated cinnamon
  • 1 tsp. freshly-grated nutmeg (TFD change, original was for cinnamon)
  • Coconut chips, to taste


  1. Preheat the oven to 400°F (200°C).
  2. Cut the bananas in half lengthwise and keep them with their skin. Score their flesh and put them in a baking sheet.
  3. Pour the butter on top of the bananas, then the orange juice. Sprinkle with the coconut sugar and the cinnamon as well as the nutmeg.
  4. Cook the bananas for 20 minutes, until well cooked. Top with coconut chips.
