  • Prep Time: 0 hours

  • ½ cup sugar
  • ½ cup bottled water
  • ½ cup lightly packed fresh mint leaves
  • 1 cup fresh blueberries
  • 1 cup fresh-squeezed lemon juice
  • 1 ½ cups cold bottled water
  • 1 cup crushed ice cubes

  1. To make the blueberry simple syrup, combine sugar, mint and water in a medium saucepan over medium heat, stirring until the sugar has dissolved. Stir in blueberries and bring to a boil; reduce heat and simmer until blueberries have broken down, about 3-4 minutes.
  2. Strain blueberry mixture through a cheesecloth or fine sieve; let cool in the freezer, you want this syrup COLD. Be careful not to let it freeze.
  3. Mix with lemon juice and water, stir, pour over crushed ice with a garnish of mint leaves and a few whole blueberries. Serve ice-cold. ☺
