- 1/2 cup sugar
- 1/2 cup bottled water
- 1/2 cup lightly packed fresh mint leaves
- 1 cup fresh blueberries
- 1 cup fresh-squeezed lemon juice
- 1 1/2 cups cold bottled water
- 1 cup crushed ice cubes
Instructions
- To make the blueberry simple syrup, combine sugar, mint and water in a medium saucepan over medium heat, stirring until the sugar has dissolved. Stir in blueberries and bring to a boil; reduce heat and simmer until blueberries have broken down, about 3-4 minutes.
- Strain blueberry mixture through a cheesecloth or fine sieve; let cool in the freezer, you want this syrup COLD. Be careful not to let it freeze.
- Mix with lemon juice and water, stir, pour over crushed ice with a garnish of mint leaves and a few whole blueberries. Serve ice-cold. ☺
