Citizens, it’s the depth of Winter, so why not look forward to the warmth of a balmy Summer day (and for our Southern hemisphere readers – it *IS* a balmy Summer day right now!) with this fantastic recipe for blueberry mint lemonade?
What more can I add except that this may be the simplest recipe you’ll ever find here on TFD – and certainly one of the most refreshing! This lemonade is also packed with blueberry’s famed health benefits as well, and the mint makes it especially delicious.
Battle on – The Generalissimo
½ cup sugar
½ cup bottled water
½ cup lightly packed fresh mint leaves
1 cup fresh blueberries
1 cup fresh-squeezed lemon juice
1 ½ cups cold bottled water
1 cup crushed ice cubes
To make the blueberry simple syrup, combine sugar, mint and water in a medium saucepan over medium heat, stirring until the sugar has dissolved. Stir in blueberries and bring to a boil; reduce heat and simmer until blueberries have broken down, about 3-4 minutes.
Strain blueberry mixture through a cheesecloth or fine sieve; let cool in the freezer, you want this syrup COLD. Be careful not to let it freeze.
Mix with lemon juice and water, stir, pour over crushed ice with a garnish of mint leaves and a few whole blueberries. Serve ice-cold. ☺
