The Hirshon Albanian Sheqerpare

Ingredients

  • 220 g flour
  • 100 g butter, softened
  • 1 cup of sugar
  • 1 egg
  • 2 tablespoons whole fat yogurt, non-flavored
  • 1 teaspoon yeast
  • A bit of salt
  • Whole peeled pistachios
  • For the syrup:
  • 200 ml water
  • 200 g sugar
  • 1/2 teaspoon lemon juice
  • 1/2 teaspoon fresh orange juice
  • 3/4 teaspoon vanilla extract
  • 23 whole cloves

Instructions

  1. Preheat oven to 350 degrees.
  2. In mixer, cream together butter and the sugar until fully incorporated. Add egg, mix until mixture is smooth. Stir in flour, salt, yogurt and yeast a little at a time until a soft dough forms.
  3. On a lightly floured surface, roll out the dough to 1/3″ thick. Cut into 2 inch flattened spheres and place on baking sheets lined with parchment paper.
  4. Press down with your thumb so they flatten further and have an indentation in the center. Put a single pistachio in the center. Leave room between each cookie as they will spread.
  5. Place in oven and cook for 20 minutes or until cookies are lightly browned.
  6. While the cookies are baking, add the sugar and water to a small saucepan and cook over medium to medium-high heat for about 10 to 15 minutes or until the syrup spins a long thread. Remove from heat. Season with vanilla, lemon and orange juices and cloves.
  7. When cookies are done, remove from oven and place on rack to cool slightly. Pour hot syrup over cookies. Serve at room temperature.
