Given yesterday’s reversal of the hated CA foie gras ban and the world rallying around the ideals of the slain French cartoonists, I wanted to post a recipe to honor both events.
The triumph that is Beef Wellington (perfected by the French despite its English origin) seems an ideal choice. Foie gras is an integral part of the recipe and with the grocery store availability of excellent frozen puff pastry, it isn’t even that difficult to make. This extravagant recipe by Michel Roux, Jr. and tweaked by me is canonical and I hope you see fit to try this at your next soirée. It deserves your fullest attention, your best guests and the most elegant atmosphere to be fully appreciated. It is not a cheap dish to make – it is in fact extremely expensive. However, it is also TRANSCENDENT and should be tried at least once in your life for your most important celebration.
