The Hirshon Ultimate Welsh Rarebit

Ingredients

Scale
  • ½ cup grated 2 year old Cheddar – Cabot Vermont or Neil Yard preferred
  • ¼ cup Lancashire cheese (if unavailable, use cheddar)
  • ¼ cup Y Fenni cheese, a variety of Welsh cheese consisting of Cheddar cheese blended with mustard seed and ale. It takes its name from the Welsh language name of Abergavenny, a market town in Monmouthshire, South East Wales. Y Fenni, when coated in red wax, is also known as Red Dragon, a name derived from the dragon on the Flag of Wales. If unavailable, just use regular cheddar
  • 1 tablespoon butter
  • 2 teaspoons Worcestershire sauce
  • 1 level teaspoon dry mustard
  • 2 teaspoons flour
  • 4 good grinds of pepper
  • 2 egg yolks
  • 2 tablespoons Welsh Lager or your favorite amber beer – drink the rest
  • 2 tablespoon Welsh Stout or Guinness – drink the rest
  • 4 slices bread toasted on 1 side only
  • For Garnish:
  • pinch of paprika
  • parsley, chopped

Instructions

  1. Mix the mustard powder with a little Stout in the bottom of a small pan to make a paste, then stir in the rest of the stout and lager and add the butter and about 1 tsp Worcestershire sauce – add the rest if you are so inclined. Heat gently until the butter has melted.
  2. Tip in the cheese and stir to melt, but do not let the mixture boil. Once smooth, taste for seasoning and add the pepper and all other ingredients except the egg yolks. then take off the heat and allow to cool until just slightly warm, being careful it doesn’t solidify.
  3. Beat the yolks into the warm cheese until smooth and keep on a low flame. Toast the bread on one side only. Spread the rarebit over the untoasted side and brown under a hot grill, serve immediately, with paprika and parsley garnish. This mixture can be made and kept in the refrigerator for several days if required.
