Ingredients

  • 3 1/4 cups rice flour
  • 1 1/4 cups sugar
  • 2 eggs
  • 2 1/2 cups coconut milk
  • 1 tbs yeast
  • 2 tsp freshly-ground cardamom
  • 1/2 tsp. freshly-ground clove (TFD addition, totally optional)


Instructions

  1. In a large bowl, stir together rice flour, sugar, cardamom, clove (if using) and yeast.
  2. Add coconut milk and egg yolks and mix well. Cover bowl with a cloth or paper towel.
  3. Allow to rise for 30 to 45 min.
  4. Gently transfer to a greased circular cake pan and bake for 35 minutes at 375°F. The rice cake is done when the top is evenly browned and a toothpick comes out clean.
