  • 55 ounce can B&B Baked Beans (no others will do!)
  • The fat from 3 slices of fried bacon
  • 1 pack Boar’s Head Natural Casing Franks, chopped
  • 1/2 teaspoon Deep-brand concentrated homestyle garlic chutney
  • 1 1/2 teaspoons Pooja-brand tomato chutney
  • 1/4 teaspoon hot pepper rum (Outerbridge-brand)
  • 6 teaspoons Chinese golden rock sugar, crushed
  • 3/4 teaspoon Asafœtida
  • 3/4 teaspoon honeycup mustard
  • ***
  • Grind all of the following in a spice grinder till fine:
  • 1/2 teaspoon nigella (black onion) seeds
  • 1/4 teaspoon whole black peppercorns
  • 1/4 teaspoon Jane’s Krazy seasoning salt
  • 1/4 teaspoon oregano
  • 1/8 teaspoon Japanese sansho pepper (or use Sichuan peppercorns for a similar taste)
  • 1/4 teaspoon fenugreek seeds
  • 1/4 teaspoon smoked Spanish paprika
  • 1/6 teaspon (that’s a 3/4 -full 1/4 teaspoon) cayenne
  • 1 bay leaf, rib removed
  • 1/4 teaspoon ajwain seed
  • 1/4 teaspoon cumin seed
  • 1/4 teaspoon coriander seed
  • 1/8 teaspoon ginger

  1. Simmer everything for 45 minutes, serve and enjoy.
