- The fat from 3 slices of fried bacon
- 1 pack Boar’s Head Natural Casing Franks, chopped
- 1/2 teaspoon Deep-brand concentrated homestyle garlic chutney
- 1 1/2 teaspoons Pooja-brand tomato chutney
- 1/4 teaspoon hot pepper rum (Outerbridge-brand)
- 6 teaspoons Chinese golden rock sugar, crushed
- 3/4 teaspoon Asafœtida
- 3/4 teaspoon honeycup mustard

- Grind all of the following in a spice grinder till fine:
- 1/2 teaspoon nigella (black onion) seeds
- 1/4 teaspoon whole black peppercorns
- 1/4 teaspoon Jane’s Krazy seasoning salt
- 1/4 teaspoon oregano
- 1/8 teaspoon Japanese sansho pepper (or use Sichuan peppercorns for a similar taste)
- 1/4 teaspoon fenugreek seeds
- 1/4 teaspoon smoked Spanish paprika
- 1/6 teaspon (that’s a 3/4 -full 1/4 teaspoon) cayenne
- 1 bay leaf, rib removed
- 1/4 teaspoon ajwain seed
- 1/4 teaspoon cumin seed
- 1/4 teaspoon coriander seed
- 1/8 teaspoon ginger
